This is a very simple, absolutely delicious little sandwich. It is my favorite vegan version of a grilled cheese sandwich because it gives the bread the same crispy butterieness along with the same melted cheesieness that we all love and miss! Feel free to add whatever other fixings you like, such as tomatoes, spinach, or onions.
Again, get creative with what you put in the sandwich! Some ideas are fresh basil leaves, fresh cilantro leaves, salsa, avocado slices, different flavors of vegan cheese, green peppers…The list goes on and on!
